Healthy Eating: Roasted Pumpkin Seeds
'Tis the season for carving pumpkins and you know what that means? No, we weren't thinking of trick-or-treating and getting candy (although, let's be honest - candy is delicious and there's a time and place for it). We were thinking of roasted pumpkin seeds!

It's astounding to think that sometimes the seeds are just scooped out and thrown away. Pumpkin seeds have phenomenal health value. They contain phosphorus, magnesium, manganese, copper, protein, zinc, iron, fiber, and antioxidants. They have been shown to boost your immune system; support prostate, heart, and liver health; and have shown anti-inflammatory benefits.

Roasting pumpkin seeds is simple (we love simplicity!) and can be done in a few short steps:

  1. Preheat the oven to 350 F.
  2. Scoop the seeds out of the pumpkin and clean them. Remove the stringy pumpkin flesh and rinse them in water.
  3. Put the seeds in a bowl and drizzle some olive oil over them. At this point, you could sprinkle any seasoning on them that you'd like, whether it is sea salt, fennel seeds, paprika... the world is your oyster.
  4. Put the seeds on to a baking sheet (line with parchment paper first, if you prefer) and then bake them in the oven for about 10 minutes.
  5. Let them cool and eat them! You can sprinkle them on salads or soups or just eat them straight out of the bowl. If you don't finish them all, store them in an airtight container.
